       Rather than think of food as bad or good,  I think it is important to think of food in terms of safety and quality. Certified gluten free wheat starch is safe for the gluten intolerant.  It provides an improved texture and taste to many gluten free products.  However, it is always important to remember that the wheat starch must meet certified standards.  It is also important to remember that moderation is the key in all of life.
